can ants live without any substrates? like in a jar without anything?

Yes, there are people who make formicarium without any sort of substrate specifically for larger ant colonies.

I think that the ants enjoy some substrate. It gives them the ability to alter there world a little. I have even seen them built ramps to make there nest entrance more accessible to them.
