Sprouted from some potting mix and grew relatively quickly. Its leaves close together at night seemingly.

I believe that is "lamb's quarters" or Chenopodium album (yes the species name is album).
Apparently you can eat it.

"Album" just means "white," so you see a lot of organisms that are pale in color with that suffix.

I just want to point out that google is coming out with something called google lens which can supposedly identify things such as plants just by pointing your camera at them. Who knows maybe it will even be able to ID ants (fingers crossed).
