Do you have a way of measuring the nests internal relative humidity? I wonder if perhaps some atmospheric parameter internal to the nest is affecting the fungus.

There's a good possibility the fungus is getting attacked by Escovopsis which is a parasitic fungus that specifically targets Attamyces.
