Are plaster/gypsum nests like this decent?

Looks fine. Ants like Camponotus and Messor will chew through if it gets too small for them.

For larger ants I'll probably use esthetic ants ytong nests. I haven't had any issues with Camponotus escaping. I might also try enclosing the gypsum nest in glass or something for no escaping.

Something about using tubing and fluon just doesn't work on the Tetramorium.
