I am going to be making a formicarium like the one featured in this video.
My plan is to use hydrostone instead of plaster. Are their any downsides to doing that?

Pretty sure hydrostone is better, so it would probably be an improvement.
No downsides at all, really. One issue you may have, though, is that hydrostone expands as it dries, so it may be very hard to get it out of your container there to finish the build. I'd recommend having two containers, so you can mess up one as your mold and still have a nice one for the final product.

Good Idea. I will definitely do that.
Ultracal 30 is very similar to hydrostone as well (gypsum plaster + portland cement), though the formulation has very low expansion eg: https://www.monsterm.../gypsum-cement/
If you are using plastic containers that have a bit of give, you might be able to get away with hydrostone, though hydrostone would almost certainly shatter a glass vase like that. Ultracal 30 also has some limited expansion, so that may very well shatter the glass as well
Actually, I am planning to use a critter keeper as my mold. Would that work? I already ordered the hydro stone from amazon.

hydrostone is very different from normal plaster, its a lot harder.
